Ingredients:
- 2 cans tuna
- 2 teaspoons Bookbinder's Stone Ground Dijon Mustard
- 1/2 cup bread crumbs
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons parsley (chopped)
- 2 tablespoons chives (chopped)
- Salt and freshly ground black pepper, to taste
- 1 egg
- 2 tablespoons olive oil
- 1/2 teaspoon butter
Directions:
- Drain liquid from tuna and add both cans to a bowl.
- Add Bookbinder's Stone Ground Dijon Mustard, bread crumbs, lemon zest, lemon juice, parsley, chives, salt and pepper, and egg to bowl with tuna. Mix thoroughly.
- Create 4 equal sized patties with mixture.
- Add olive oil and butter to skillet on medium-high heat.
- Place tuna patties in pan and cook each side until golden brown, about 3-4 minutes on each side.
- Serve on a bun with extra Bookbinder's Stone Ground Dijon Mustard if desired.
