Ingredients:
- 1 lb shrimp, peeled & deveined
- 1 lb steak (ribeye or sirloin), cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced into half-moons
- 1 red onion, cut into chunks
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- Wooden skewers (soaked in water for 30 minutes)
Cocktail Sauce Butter
- ¼ cup Bookbinder's Cocktail Sauce
- 4 tbsp melted butter
- 1 tbsp Worcestershire sauce
- 1 tsp lemon juice
- 1 tbsp chopped parsley
Directions:
- Preheat grill to medium-high heat (about 400°F).
- Assemble skewers by alternating shrimp, steak cubes, and veggies. Brush with olive oil and season with salt, pepper, and smoked paprika.
- Grill skewers for about 3-4 minutes per side, flipping once, until shrimp is opaque, and steak is cooked to your liking.
- Make the cocktail sauce butter by whisking together Bookbinder's Cocktail Sauce melted butter, Worcestershire, and lemon juice.
- Brush skewers with cocktail sauce butter during the last minute of grilling for a glossy, flavorful finish.
- Serve hot, garnished with chopped parsley and extra cocktail sauce on the side for dipping.
