Ingredients:
- 2 lb potatoes, skin on, cut into pieces
- 4 Tbsp olive oil
- 3 Tbsp Bookbinder's Whole Grain Mustard
- 2 Tbsp honey
- 2 Tbsp chopped fresh rosemary, plus more for garnish
- splash of sea salt
Directions:
- Heat oven to 425F. Wash potatoes.
- Place washed and cut potatoes in a large mixing bowl.
- In a small bowl, whisk together oil, Bookbinder's Whole Grain Mustard, honey, rosemary, and sea salt. Pour over potatoes and massage glaze into potatoes with your hands.
- Place coated potatoes on a baking sheet. cook for approx. 35 minutes until potatoes have softened and taken on a roasted color.
- Allow potatoes to cool before serving.
