Ingredients:
- 2 ripe avocados, halved and pitted
- 1 cup cooked shrimp, peeled and deveined (and/or tuna/crab)
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup Bookbinder's Tartar Sauce
- 1 tbsp lemon juice
- Salt and pepper to taste
- Optional: paprika for garnish
Directions:
- In a mixing bowl, combine the cooked shrimp, celery, red onion, Bookbinder's Tartar Sauce, lemon juice, salt, and pepper. Mix until well combined.
- Scoop out a little of the avocado flesh to create more space for the filling if desired.
- Spoon the shrimp mixture into each avocado half.
- Garnish with paprika if desired and serve immediately.
