Ingredients:
- ¼ cup Bookbinder's Cocktail Sauce
- 3 tbsp extra virgin olive oil
- ¼ cup lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 ½ lb large cleaned shrimp
- 2 cloves garlic, smashed
- 1 onion, quartered
- 1 dried bay leaf
- 2 tsp. kosher salt
- ½ tsp. black pepper
- 12 cups romaine lettuce
- 4 cups chopped tomato
Directions:
- Whisk together Bookbinder's Cocktail Sauce, oil, lemon juice, salt, and pepper. Set aside.
- Fill a medium sized pot with water and bring to a simmer. Add garlic, onion, bay leaf, salt and pepper. Bring to a boil and add shrimp. Cook shrimp until opaque (approx. 2-3 minutes). Remove Shrimp from water and toss in the prepared dressing. Let sit in the fridge for approx. 1 hour.
- Add lettuce and tomato to the shrimp and dressing mixture. Toss until combined.
- Serve & enjoy!
