Ingredients:
- 8 oz. pasta
- 1 lb. shrimp, peeled and deveined
- 1/2 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, thinly sliced
- 1/2 cup cucumber, thinly sliced
- 1/4 cup green onions, chopped
- 1/2 cup Bookbinder's Spicy Sriracha Sauce
- 1/4 cup mayonnaise
- 2 tbsp honey
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Directions:
- Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
- Season the shrimp with salt and pepper. In a large skillet, heat a little oil over medium-high heat. Cook the shrimp for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and let cool.
- In a small bowl, combine Bookbinder's Spicy Sriracha Sauce, mayonnaise, honey, and lime juice. Mix well.
- In a large mixing bowl, add the cooked pasta, cooked shrimp, cherry tomatoes, red bell pepper, cucumber, and green onions.
- Pour the dressing over the pasta and shrimp mixture. Toss gently to coat everything evenly.
- Season with salt and pepper to taste. Mix well.
- Cover and refrigerate for at least 1 hour before serving. Garnish with chopped fresh cilantro if desired.
